Brazilian Carrot Cake

INGREDIENTS
Cake
3 carrots (270 g peeled and cleaned)
4 eggs
1 cup of vegetable oil
1 and 1/2 cups of sugar
2 cups of all-purpose flour (plus some for dusting the baking pan)
1 tbsp of baking powder
a pinch of salt
butter for greasing the baking pan
Chocolate Glaze
1/2 cup cocoa powder
1/3 cup sugar
1 tablespoon butter
1/3 cup water
INSTRUCTIONS
Cake
Preheat the oven to 350°F (medium temperature). Grease a baking pan with butter.
Sprinkle flour in the baking pan and shake it over the sink to remove the excess.
Place the flour, salt, and baking powder in a bowl and sift it if the flour is a bit old.
Mix gently and reserve.
Wash the carrots and peel them using a vegetable peeler or knife.
Discard the upper ends and cut the carrots into slices.
Break the eggs, one by one, into a bowl (to check if they are good) and transfer them to the blender.
Add the carrots, oil, and sugar, and beat until a homogeneous mixture is formed (about five minutes).
Add the blender mixture to the bowl with the flour, baking powder, and salt.
Mix it gently until smooth and homogeneous.
Transfer the batter to the baking pan and bake in the oven for about 40 to 50 minutes.
To check if the cake is done, insert a toothpick into the batter, if it comes out clean, it is a sign that the cake is baked and can be removed from the oven. Otherwise, leave it for a few more minutes until it is fully baked.
Let it cool for 15 minutes before unmolding.
Chocolate Glaze

We'll mix some cocoa powder, sugar, butter, and water in a small saucepan.
Bring to a boil over medium heat, slowly whisking it the whole time.
After boiling, continue stirring for another 2 minutes or until the glaze forms large bubbles and thickens. A quick tip: make sure to give the glaze a good stir so that it can crystallize and harden perfectly later on.
Turn off the heat and continue stirring it with a silicone spatula, this time for about 2 more minutes until the mixture stops boiling. This will guarantee that the glaze doesn’t run off the cake.
Cover the cake with the glaze.
After covering the cake, let the glaze cool completely until it hardens a bit before serving.
